What to eat

The individual cuts

There are seven, and they all follow one rule the menu prints above the list: a plate for one person, 250 grams, and every board and individual cut comes with rice, farofa, vinaigrette and chimichurri. That takes the arithmetic out of the side dishes: the cut arrives complete.

The list moves from beef to pork without apology: filet mignon, picanha, bife ancho, and on the pork side costela suína and picanha suína, the cut that supplies half the name of the house. Boned chicken thigh and carne de sol with boiled cassava round it off, the latter being the regional plate on the menu.

The house's own menu adds fraldinha among its top sellers, and sharing boards are the other way to order: in the house photos a round griddle arrives at the table with sliced meat, potato, grilled pineapple, tomato and onion.

Salads and sides

Two salads: Caesar, with chicken, lettuce, tomato, grated parmesan and crisp croutons, and a mixed one with lettuce, tomato, carrot and onion. Sides on their own are rice, fries, garlic bread, cassava and beans, to add to a board being split between several people.

The vegetarian line

The menu keeps a section of its own: grelhados veggie, a mix of grilled vegetables. It is a plate rather than a garnish, which lets you seat someone who came for the meat and someone who does not eat it at the same table.

From the street, your landmark is the round sign with the pig and the cow on the roof, with the front open to Rua das Gameleiras. The same logo turns up on the flags stuck into the burgers and on the stickers on the table.

When to go

Porca Vaca opens six days a week, always 6pm to midnight: Sunday, Monday, Wednesday, Thursday, Friday and Saturday. Tuesday it is closed, and that is the fact to write down before planning a week.

There is no lunch here. The coals start at six in the evening, so this house belongs to the night. If you come off the beach hungry at midday, this is not the answer.

The easiest window for a table runs from 6 to 7.30pm: the grill has just found its rhythm and the room is loose. From 8 to 10pm is the peak, and that is when a booking earns its keep, especially for a group ordering a board. After 10pm the pace drops and the room opens up again.

And the fact that sets it apart from the other meat houses in the village: the kitchen runs to midnight. For a late dinner after a long day out, or for a table that only sets off at eleven, food is still being served.

The house sits at Rua das Gameleiras 25, metres from central Pipa and a few minutes on foot from the path down to Praia da Pipa. The whole village is walkable, so staying centrally means you will not need transport.

If you drive, know that spaces are scarce in this stretch: wheelchair-accessible parking is declared, but the street fills in high season and the sensible move is to leave the car a couple of blocks back. Arriving from Natal, look at the transfer options.
