Espetos and burgers at Lua Da Pipa

On Rua Albacora, Tuesday to Saturday from 6pm to 11pm: espetos and burgers. Closed Sunday and Monday, so message them before you walk over.

Services

Rua Albacora lies outside the cluster of shops in Praia da Pipa, in the part of the village where the streets are residential streets. There, five nights a week, Lua Da Pipa opens, carrying what it does in its own name: burgers and espetos, Brazilian grilled skewers. The hours are short and fixed — six to eleven at night — and the week has two closed days.

What to eat

The house menu carries its own name at the top and lays the burgers out as a numbered run from 01 to 08, each with its recipe written beside it. Every one of them comes on pão de batata, the soft, faintly sweet potato roll that is the standard bun for an artisan burger in the Northeast, and what changes from one to the next is the protein and what rides along with it.

The X-burgers

X-Pipa Bacon. A 140-gram hand-made patty, cheddar, crisp bacon and bacon mayonnaise. It is the house's most straightforward build: beef, cheese and bacon twice over — on the griddle and in the sauce — on the potato roll.

X-Sibaúma. A 140-gram chicken patty, mozzarella, lettuce, tomato and herb mayonnaise. This is the no-red-meat option on the counter, and the greenest of the four.

X-Amor. A 140-gram pork patty, queijo coalho, onion, lettuce, tomato and herb mayonnaise. The queijo coalho is the Northeastern touch on this menu: a curd cheese that grills and browns without running, so it arrives whole inside the bun.

X-Chapadão. Two smash patties, cheddar, bacon, bacon mayonnaise, lettuce and tomato. This is the double: two discs of beef pressed flat on the griddle instead of one, for the hunger that walks up from the beach.

How a plate arrives

The house's own photographs fill in the rest of the build. Burgers come wrapped in paper and set on a wooden board, with a little basket of fries beside them: that arrangement repeats across the whole gallery, so it is the standard rather than a one-off. On the table there are also ramekins of sauces and farofa, the toasted cassava flour you scatter over the top.

The fries hold a place of their own. They come in their little basket beside every burger, but they also show up alone on the board, in a portion sized for the table: they are the house's fixed side, not a garnish to be negotiated. In several of the pictures the melted cheddar spills over the edge of the bun, and the lettuce and tomato arrive whole rather than chopped.

The detail that identifies the kitchen is on the bread itself. Several of the burgers arrive with the crown branded: it reads "Lua da Pipa" and, underneath, "hamburguer e espetinhos". It is the house signature, and it is what tells you at a glance that what is on the table came from here.

What to drink

The drinks list is short and built to go with the bread, with no cocktails and no wine list. There is canned soft drink for anyone eating alone, and litre bottles — guaraná and Coca-Cola — to share when the table is a group.

On the still side, orange juice in a 500-millilitre bottle and still water in the same size. It is exactly the list a street-food house keeps: what you order with your free hand while the other one is holding the burger.

The setting

What the photographs show is a plain wooden place: tables of dark slats, a grey railing along one side, the house's own paper standing in for a tablecloth and the serving boards resting on top. There is no linen and no stemware — the table is laid with just what you need to eat with your hands, and that is part of the format.

The whole gallery is shot after dark, which fits the hours: the house opens once the sun has gone. The feel is of a neighbourhood stop where you eat on the spot with the street alongside, and where a table is yours for as long as a burger and its basket of fries take. There is an indoor room, so there is somewhere to sit, but the spirit is street food: the house also turns up among Pipa's food trucks.

When to go

This is the line on the page that helps most, and it is worth reading before you walk: Lua Da Pipa closes on Sunday and Monday. Two days running with no service, and they are exactly the two when most people arrive in town or find themselves without a plan.

Tuesday to Saturday the hours never change: 6pm to 11pm. Five hours a night, five nights a week. It is a short window, and that changes how you use it: this is not a place you turn up at late. By eleven at night it has closed, so dinner needs deciding early.

The stretch that works best is the first one, between six and eight in the evening: the house has just opened and the whole night is ahead. If your plan is after ten, message first so you are not arriving on top of closing time.

Where it is and how to get there

Lua Da Pipa is on Rua Albacora, in Praia da Pipa, Tibau do Sul. Its coordinates put it under a kilometre from the centre, south and inland: this is a neighbourhood walk rather than a stroll down the avenue, worth bearing in mind if you are heading back after dark.

From central Pipa you leave the shopping cluster and keep going south. And if your day ends on Praia da Pipa, the natural moment to drop in is on the way up from the beach, right when the house opens.

If you are arriving in Pipa the same day, sort the ride first and dinner second: with your transfers to Pipa already booked, the first evening gets decided without watching the clock, and a burger at seven is a good plan for anyone who has just climbed out of a car.

Who it suits

Early diners. With the kitchen running six to eleven, this is a place built for the evening that starts as you come off the beach, not the one that starts at midnight.

Anyone staying in the area. Under a kilometre from the centre and on a residential street, it is close at hand for anyone sleeping nearby who would rather not climb back up to the avenue.

Anyone here for the bun and the griddle. Hand-made 140-gram patties on pão de batata, a double smash, queijo coalho and espetinhos: the menu is short and gets straight to it.
